Omelette with truffles: beat 3 eggs, add 1 pinch of pepper (no salt) can add a little water or cream to taste:
* Option I: Add pieces or peeled black truffles soaked in brandy few minutes immediately after we warm omelet.
* Option II: Add 5 minutes before end of cooking sliced white truffles. Before serving leave a few minutes off of the hot plate.
* Option III: Add the truffles in the last 30 seconds of cooking, in hot plate off.
Trim according to the season.
